Hinzu kommen Einspameat 12 6/2016 industry generally has little to do with ingredients in powder form. Handling with meat trolleys is no longer necessary, instead specialist know-how from the powder industry is needed which involves conveying, weighing and loading mixers. Here, aspects such as possible cross-contamination have to be taken into account. Some of the raw materials are also allergenic and should therefore not have to appear in the declaration of all products. This is only guaranteed by carefully avoiding dust development. In the case of intensive mixers, when filling with powder substance there is the possibility of vacuum filling by means of vacuum conveying. For this appro- priate valves are present on the cover and a vacuum pump is incorporated in the side of the installation. In this way dust-free filling with little need for handling is simply assured. On the drum base of the machine there is an emptying valve through which all products are emptied, either into a traditional meat trolley or, better still, in a closed process via corresponding pumps and pipelines directly into the filling plant without being subject to any further risk of contamination. In addition to the clear advantages in terms of the mixing effect and product handling, a further benefit of the intensive mixer is the lower energy consumption than bowl choppers of comparable size. Product movement and thereby movement energy are brought about without loss by the three-arm mixer tool at the base of the machine. This result is a so-called thrombus flow in the product which leads to thorough mixing. Smaller, slower, more economical At the side of the mixer vessel is the cutter head which breaks down and emulsifies the mix. In relation to the filling volume it is of much smaller dimensions than in bowl choppers. Its diameter determines the amount of energy applied to the product and thus not only the heating but also the energy costs during manufacturing. Furthermore, there is the fact that in intensive mixers the cutting head operates at lower speeds. However, through the rapid flow into the blades optimum emulsification is guaranteed. A simple indicator of the efficiency of such a mixer and emulsifier is the specific mechanical energy (SME). It is calculated from the quotient of supplied energy, mixing time and production quantity. If the supplied energy cannot be measured, as a first starting point the connected load of the machine can be taken. 65kW * 10min kW * min SME = P * t m As a rule the connected loads of intensive mixers are around 40 % those of a bowl chopper. If the system then requires an even shorter mixing time, dramatic differences in the specific mechanical energy of up to a factor of 5 result in some cases. This factor is reflected in the operational lifespan of the machine and in the energy costs. In the case of the intensive mixer the latter are around 20 % those of the bowl chopper. In addition there are savings in investment in the new machine and in the installation costs as the connected load also always requires corresponding infrastructure. For experiments Glass in Paderborn has mobile demonstration installations as well as a modern fully-equipped technical centre available. Once the decision for such a system has been made this is produced in acBlick ins Technikum des Unternehmens am Firmenstandort in Paderborn./ A view into the Glass technical centre in Paderborn.
